Another Random Snack Entry - Potato Hash and a Carb on Carb Spring Roll

First, a quick plug for Jack's Egg Farm. Damn those eggs are sturdy. I thought I was cracking a frozen egg but turns out the shell was just really thick. I don't know how many generations it takes to breed thick shelled egg laying hens but Jack's has got it down good.

So I was making spring rolls from a mise en place my mom had put together earlier this morning. But I ran out of filling and I had like 5 wrappers left over.

I grabbed a white potato from the kitchen and half a red onion I found in a fridge, grated those two up, and tossed them into the leftover eggwash for the spring rolls. Plus the salt, pepper, and (later, after seeing how wet it was) some mashed potato flakes.


After making 5 overstuffed rolls, I still had about a third of the potato mixture left. Not a problem. Hash time!


Following a familial aesthetic tradition, I folded the scallion in half before slicing it. Heart-shaped onions on a dollop of sour cream always gets the ladies.
